I'm in search of a diaglufgen (diabetic, gluten-free and vegan) miracle bun to ensure that all my co-workers can eat them.<\/p><p>In between trial runs with recipe tweaks for the miracle buns (none of which I've been happy with yet), I've been making some more traditional ones. Today I baked a batch of Salted Caramel Chocolate Oat Muffins, making up the recipe as I went along, and I thought you might like to see the recipe too, as they're easy and delicious.<\/p><p>In my cupboard, I had some accidentally vegan salted caramel hot chocolate powder from Aldi, and it worked wonders. You can use any other hot chocolate powder that has a little sugar in it, but this one is fantastic for drinking and baking.<\/p><p><img src=\"https:\/\/images.teemill.com\/5d96201da740c0.95517974.jpeg.jpg?w=1140&h=auto\" alt=\"\" title=\"38677975\" \/><\/p><p>The buns came out great. Not too sweet, because of the salted caramel part, and quite filling because of the oats. The outside is a bit chewy and the inside is not stodgy.<\/p><p><img src=\"https:\/\/images.teemill.com\/5d9620cf57d177.39355728.png.jpg?w=1140&h=auto\" alt=\"\" title=\"38678107\" \/><\/p><p>If you try this recipe, please let me know how you get on. Be nice about that too, please. :)<\/p><p><strong><em>Want more recipes, offers, and updates from Smug Vegan? <a href=\"https:\/\/mailchi.mp\/451da0e0838c\/smugveganshop\" target=\"_blank\" rel=\"noreferrer noopener\">Join our newsletter list<\/a><\/em><\/strong><\/p><p><img src=\"https:\/\/images.teemill.com\/5d961e97667f38.21517768.png.jpg?w=1140&h=auto\" alt=\"\" title=\"38677754\" \/><\/p><h2>Recipe (makes about 12):<\/h2><h3>Preparation:<\/h3><ul><li><p>Pre-heat oven to 180C.<\/p><\/li><li><p>Gather:<\/p><ul><li><p>A large mixing bowl<\/p><\/li><li><p>A measuring jug\/cylinder<\/p><\/li><li><p>A wooden spoon<\/p><\/li><li><p>A dozen muffin cases (I use silicone ones)<\/p><\/li><li><p>A muffin or Yorkshire pudding tray<\/p><\/li><li><p>The ingredients listed below<\/p><\/li><\/ul><\/li><\/ul><h3>Ingredients:<\/h3><ul><li><p>1 cup plain wholemeal flour<\/p><\/li><li><p>1 cup porridge oats<\/p><\/li><li><p>1\/2 cup Aldi's Salted Caramel Hot Chocolate Powder<\/p><\/li><li><p>1\/4 cup granulated sugar<\/p><\/li><li><p>1 1\/2 teaspoons baking powder<\/p><\/li><li><p>5 tablespoons oil (sunflower or similar)<\/p><\/li><li><p>1 teaspoon egg replacer (I use Ogran)<\/p><\/li><li><p>1 teaspoon vanilla essence<\/p><\/li><li><p>Soya milk to get to desired consistency (probably about a cup)<\/p><\/li><\/ul><h3>Method:<\/h3><ul><li><p>Put all the dry ingredients in your mixing bowl and stir together with the wooden spoon. If any of your dry ingredients are a bit lumpy, do it through a sieve.<\/p><\/li><li><p>Make a hole in the middle of the mixed dry ingredients and pour in the oil and vanilla essence.<\/p><\/li><li><p>Mix with the wooden spoon. It will be very very thick but all the ingredients should be combined (i.e. wet).<\/p><\/li><li><p>Add soya milk bit by bit, stirring in between. I stop when the mix is a thick batter. It will form peaks in the bowl but they flatten out again in a couple of seconds whilst you watch. N.B. I don't think it matters if it's a little too wet, you'll just need to leave the muffins in the oven a bit longer.<\/p><\/li><li><p>Put the muffin cases in your muffin or Yorkshire pudding tin and then scoop blobs of the muffin batter into each case. I use two dessert spoons for this - one to scoop and one to scrape.<\/p><\/li><li><p>Fill the cases until the level of the batter in each one is about 2cm below the top of the case.<\/p><\/li><li><p>Pop the tin with the filled muffin cases in the pre-heated oven.<\/p><\/li><li><p>I check them after 10mins to make sure they're rising and will turn the tin around, if they're not rising evenly.<\/p><\/li><li><p>Cook for a total time of 15 - 20mins. They're done when the top is fairly firm and a skewer or knife poked into the centre of a muffin comes out clean.<\/p><\/li><\/ul><p><strong><em>Tasting note: <\/em><\/strong>Eat as many as you can whilst still warm and I won't shame you for putting vegan butter on these babies too.
